Make Your Own Chimichurri with Tempeh

Recipe Makes 2 Servings.

Ingredients:

10 ounces sliced tempeh

4 minced garlic cloves

1 cup parsley

1 cup chopped cilantro

1/3 cup red wine vinegar

1 tsp. oregano

½ tsp. salt

½ tsp. red pepper flakes

3 tbsp. olive oil

1 cup vegetable broth

1 tbsp. soy sauce

Directions:

Begin by steaming the tempeh for eight minutes.

Afterwards, bring every other ingredient except for the soy sauce into a food processor and blend them until smooth.

Pour half of this created mixture into a separate cup, and add the tamari to this, stirring well.

Pour about 3 tbsp. of this mixture onto a plate, and place the tempeh on the plate. Pour the other half of the marinade over it, and rub the tempeh well. Allow the tempeh to rest for one hour. Afterwards, flip the tempeh and allow it to sit for twenty minutes.

Next, pour olive oil into the bottom of a skillet and cook the tempeh in the oil until you’ve achieved a golden brown color. Enjoy.
